This week had been one of the coldest time of the year, but that hasn’t stop me from cooking and sharing recipes! I don’t know about you, but I am a fan of arugula especially that spicy taste comes in the end.

Many of you probably grow some vegetables and herbs like basil, rosemary, and mint in your garden or kitchen. In the upcoming summer, planting arugula is definitely something on my to-do list. Before that, I can only get them from supermarket. There are a variety of recipes to do with arugula, but we are going to start with something simple. (Simple and tasty is a must in my cooking bible)

This is a pasta salad everyone can pull off with handy ingredients. I am using some canned salmon, but tuna is another great option. If you have friends coming over and want to make a dish quickly then this one good choice. Here is what you need:

Preparation  : 5 mins
Cooking: 10 mins

INGREDIENTS

250g shell pasta
200g canned salmon
2 cups of arugula
1 cups of cherry tomato (halved)
1/4 cup pitted olives
2 tbsp parsley (finely chopped)
1 lemon juice
1/4 cup olive oil
Some salt, pepper to taste

PROCEDURE

  1. In a pot with water, drizzle a bit of olive oil and some salt. Bring the water to boil. Add shell pasta and cook about 8-10 mins. (Depends on the pasta, please refer to the instruction on the package) Drain the pasta and set aside.
  2. In a salad bowl, add in arugula, salmon, cherry tomatoes, olives, and parsley. Give the ingredients a quick toss. Add lemon juice and shell pasta, mix very will with spatula. Season with some salt and pepper. Let the salad sit about 10 mins before serving!
