Lately, I have been craving for something sweet. Well, honestly maybe I have this craving most of the time. Today’s recipe is the kind of sweet dessert I will turn to sometimes. It is a comfort food that has creamy texture, and the croissant on top is still crispy.  Everything just melt together in your mouth, with the apple cinnamon sauce and vanilla ice cream together. Cinnamon Apple Juice
  1. Peal & dice the apple into small pieces.
  2. In a pan, over medium heat, melt the butter. Add brown sugar, granulated sugar, and flour. Stir well.
  3. Add cinnamon, diced apples and water. Cook for 15 minutes. Stir occasionally.
  4. Take off heat and strain through a strainer, saving the juices. We will be using the juice to make apple sauce and top off croissant pudding.
Bread Pudding
  1. Preheat the oven to 190C.
  2. Tear apart & place stale croissant in the baking dish evenly. Add apples all over the bread evenly. Spread it around a little to let some apples get between the bread with a fork.
  3. In a large bowl, mix together whisk eggs, milk, melted butter, vanilla extract, sugar, cinnamon and rum. Mix everything well.
  4. Pour the egg mixture over the croissants. Use a fork to press down the bread so they absorb all the egg mixture. Let it sit for 3 minutes.
  5. Bake at 190C for 40 minutes. If the croissant gets to much color, cover with aluminium foil. Check if the pudding is well cooked by lightly shake the baking dish. If the eggs in the center is set, that means it's well cooked.
Apple Sauce
  1. Whisk together apple juice we made and saved earlier and whipped cream.
  2. Drizzle the apple sauce on top of the croissant pudding. Serve with a scoop of ice cream if you like. Enjoy!
